Left-Over Wednesdays: Broccoli and Rice Side Dish

Broccoli Rice Goodness
I made this up the other day as I wandered around the Piggly Wiggly. I wanted to have some fresh veggies, but I get tired of salads and plain steamed vegetables. Hope you enjoy!



brown rice (I used boil-in-bag 10 minute rice)
2 heads fresh broccoli, cut into small florets
2 Roma tomatoes, diced small
1 shallot, minced
1/2 container feta cheese, crumbled
olive oil
salt and pepper


1.Put rice on to cook according to directions on the box. I used the 10-minute rice and the timing was perfect. Allow much more time if you use the "regular" rice.

2. Saute shallots in olive oil until translucent, about 1 minute. Add broccoli and saute quickly for 4-5 minutes until broccoli is just starting to soften.

3. Add tomatoes and lower the heat to medium; keep tossing mixture in saute pan.

4. When rice is finished, add the feta to the broccoli mixture and toss until cheese starts to melt.

5. Add the broccoli mixture to the sauce pan with the rice and toss well. Salt and pepper to taste. (Or add all ingredients at this point to a serving bowl and toss together)

Mmmm, that sounds so good. I love just about anything with feta (although I'm really not supposed to eat it right now :( ).

I got nothin' on the name...

Ooh - that sounds good! The only thing with the name I can think of is "Feta smothered broccoli and rice". Not so original, but it accurately describes the dish.
